Portabella Philly Cheese "Steak"

Description
This is a Philly cheese steak without the steak. Really. And it's good, too.
Ingredients
- 2 T olive oil
- 1 onion, peeled and sliced
- 4 portabella mushrooms, stems removed
- 2 T water
- 4 american cheese slices
- salt and pepper to taste
- 4 sub or sandwich rolls
Instructions
In a large skillet, over a medium heat, add the olive oil. Sauté the onion for 5 minutes, until it’s starting to cook through. Season with a bit of salt and pepper. Add mushrooms and water, and cover. Sautee for five minutes, until mushrooms are cooked through. Season to taste with salt and pepper. Place cheese on top, and let it sit for a few moments, to begin melting. Then, stir the cheese into the mushrooms and onions. Serve immediately in rolls.
Notes
Organic American cheese works very well, as it's very flavorful.
